Eva Hinson was born a Summerville native in 1914. Married to Thomas “Eddie” Hinson, the couple began their first restaurant venture in 1944. Eddie quickly tired of the restaurant business and turned over the operation to Eva. From that day forward the restaurant was called Eva’s. Eva’s Restaurant has been in its current location since 1952. Many of our patrons have dined here their entire lives & recall “Mrs. Eva” peeling potatoes or snapping beans from her rocking chair in the kitchen. She was also known for her scratch made desserts, particularly her apple pie.  Although Eva passed away in 2011 at the age of 96, her memory is still alive in the restaurant today. Second generation cooks, trained by Eva, still work in our kitchen, her treasured plate collection still adorn the interior, and a number of menu items are her original scratch made recipes. While Eva’s has changed hands a few times over the years, and is now owned by Ray & Whitney Easler, we hope to honor Eva by keeping our restaurant true to its roots.  Nothing fancy, simply southern.
